I’ve watched with a weird fascination as the Instant Pot craze took over the world over the past couple of years. As a minimalist, I don’t generally jump all over a new product; I like to see how it stands up to the test of time. I’m also not likely to spend a lot of money on some behemoth that will be permanently stationed on my counter. But also as a minimalist, I get super excited about a product that can do multiple things in one, such as pressure cook, slow cook, and saute. So I’ve been slowly won over to the dark side, but I still couldn’t justify forking over $160.
Then Amazon’s Prime Day happened and my husband nudged me to go ahead and make the purchase. I vacillated a little over which model, but in the end seeing this one was $100 ($60 off!) and our family is pretty hungry, I went ahead and ordered it.
I’m not exaggerating when I say I use it every day, often multiple times per day. My favourite use so far is boiled eggs… so quick and they peel like magic! I’ve done steel-cut oats, cinnamon apples, maple-dill carrots, rice pudding, pot roast, whole chicken, sausage from frozen… There isn’t a huge learning curve, mostly just adjusting liquid amounts slightly as some recipes are created for another size of Instant Pot. This has been a fun experiment and I’m so happy with my purchase.
This week of 32°C (90°F) is pretty warm for us here on the prairies, and with no air conditioning I’ve been extra grateful for the simplicity of throwing a dish or two in the Pot. Let me know your favourite recipes or if you’re still on the fence about purchasing!
