I’ve long been a fan of green smoothies. They are super fast to make, and an easy way to get greens into my kids! Also, if you’re not big on breakfasts (like myself and my oldest son) it goes down like a drink and is somehow a lot easier to stomach first thing in the morning.
My biggest issue is getting stuck in my rut of banana/spinach/mango/pineapple which is super delicious but does get a tiny bit boring after a few weeks. Cue this blog post from Jillian Harris a couple of years ago, and I was sold! It’s smooth, creamy, green… and spicy! Great way to start the day.
I use the same ingredients, for the most part, but I adapted a little to suit me.
Fiesta Smoothie
- 2-3 cups loose fresh baby spinach
- 1/2 cup frozen banana chunks (I peel, cut & freeze bananas ahead of time)
- Small handful fresh cilantro
- 1/2 cup frozen pineapple chunks (I get the Kirkland bag from Costco)
- 1/4 jalapeno
- 1/2 avocado
- 2 cups water
Blend all together and enjoy the deliciousness!
